Chicken with Creamy Sun Dried Tomato Sauce

Ingredients:
500g skinless chicken breast fillets
40 g (2 tablespoons) Flora Original Spread
1 small onion, sliced
1 clove garlic, crushed
1/4 cup sun dried tomatoes, finely sliced
3 teaspoons cornflour
1 cup low fat milk
2 teaspoons tomato paste
1 cup fresh basil leaves, finely shredded
Method:
step 1: Trim chicken breast fillets. Preheat a frying pan over a medium heat and melt half the Flora. Add chicken and cook on each side until cooked through. Remove from the pan and keep warm.
step 2: Add remaining Flora to the pan and when melted, add onion and garlic. Fry until soft.
step 3: Whisk cornflour into milk and pour into pan. Add sun dried tomatoes and stir until sauce is boiling. Remove from the heat. Stir in tomato paste and basil. Spoon over chicken and serve at once, with creamy mashed potatoes and steamed sugar snap peas.
Hint: If breast fillets are large, use two fillets and cut in half horizontally to give four serves of chicken.
